Dav's Delectable Dairy-Free Mac n Cheeze
I'm SO excited to share this recipe with you! My boyfriend, Dav has been making this cashew cheeze sauce for a few months now...it literally rocks my world. I had to get him to share the recipe! :) It's heavenly healthy comfort food and perfect for a rainy day like today here in New Jersey.
We discovered this cashew cheeze is also amazing to add to quinoa dishes or even to a salad. A little bit of this cheeze goes a long way to dressing up your favorite dishes! This recipe is so easy and takes about 20 minutes to make. Once prepared expect about 4 - 5 servings and you can keep it in your fridge for about a week.
1cup of cashews
2 tablespoons of nutritional yeast
1 tablespoon of fresh lemon juice
1 cup of vegetable broth (add more if consistency is too thick for you)
1/2 tsp of garlic powder
Your favorite pasta (I use gluten free)
Arugula or Spinach
1 shallot or onion, chopped
4-5 strips of smokey tempeh from Lightlife (optional)
A couple of pinches of salt and pepper, or to taste
For the sauce:
Bring 3-4 cups of water to a boil (enough to submerge cashews). Add 1 cup of cashews to the boiling water and turn down to simmer for 20 minutes or until cashews are soft. Drain cashews and add to food processor (nutri-bullet) with nutritional yeast, salt and pepper, lemon juice, garlic powder, vegetable broth, and blend until smooth. I start with enough vegetable broth to cover the boiled cashews and add a bit if needed. Start with less and add it to desired creaminess.
For the pasta:
Boil and cook your pasta. In a separate pan, saute shallots in coconut oil. Once the shallots are translucent add tempeh and saute until golden brown. Toward the end add spinach or arugula and turn the stove off and mix together. Feel free to season with your favorite spices (I add more garlic powder).
Drain pasta, add the cashew cheeze sauce to the cooked pasta on low heat until mixed well. Turn off heat and mix in the saute.
Serve and ENJOY!
