Curry Cauliflower Rice
I can't tell you how happy I am to be leaving for Florida tomorrow! The winter has been rough here in New Jersey. I don't think my sun lamp that I set up in my office is exactly helping either. :/
Before I leave, I wanted to post my newest recipe that I know you will love.. Curry Cauliflower Rice! This dish doesn't contain a drop of rice though. Just a bowl full of veggies that will warm you up, support your immune system, fight off disease and aid digestion. Plus it's quick and easy to make. It took me less than 20 minutes! I'm all about quick and healthy meals that taste GREAT!
For this recipe I chose ingredients that have potent anti-inflammatory & anti-cancer effects, immune-supporting properties, detoxifying capabilities, and phytochemicals. By the way, did you know that onions and garlic help prevent disease and detox the body? According to a study conducted at the Fred Hutchinson Cancer Research Center in Seattle, they found that eating a teaspoon of fresh garlic and a half cup of onions per day increases the levels of a key enzyme for removing toxins in the blood cells of healthy women. The authors of this study believed that men would require a higher dose on average for the same effect, because of their larger body size.

**This dish can be made in 20 minutes! Have it as a side dish or complete meal by serving it with a salad. You can even add some hemp seeds to the dish for extra protein.

Curry Cauliflower Rice
1 head of organic cauliflower
1 - 2 cups of your favorite type of mushroom (I used white)
4 cloves of garlic, minced
1 red onion, chopped
1 TBS unrefined coconut oil
1 tsp turmeric
1.5 TBS cumin
generous pinch of cayenne pepper (or more if you like heat)
sea salt and pepper to taste
Start by adding the cauliflower to a food processor and chop until the cauliflower looks like the consistency of rice. Then begin to sauté the onion in oil on medium heat until it becomes soft and golden, which brings out the natural sweetness.
Add salt and freshly ground black pepper while the onion is cooking. Once onion is cooked, add the garlic, cauliflower, mushrooms and spices. Saute over low to medium heat until mushrooms and cauliflower are cooked (about 10 minutes). Adjust seasoning to taste.
Top it off with fresh parsley or cilantro if you'd like and/or some avocado. :)
