Ahh fall produce! I love earthy veggies. They are naturally sweet, nutrient dense, filling and grounding. One of my favorite's are parsnips. These little guys are rich in nutrients like fiber, manganese, folate, potassium, and vitamin C.
I like to make this recipe below when I have a little craving for something sweet + salty or because of the simple fact that they make a great side dish. Kids will love them too!
Oh did I mention how easy they are to make?
3 parsnips, cleaned, peeled and cut
1 - 2 tbs olive oil (depending on size of parsnips)
garlic powder, to taste
sea salt or Himilayan salt
Pre - heat oven to 350 degrees. After you cut the parsnips add them to a large bowl and coat them with the olive oil. You can start with 1 tablespoon of olive oil but if they still look dry add another 1/2 - 1 tablespoon. Proceed to add garlic powder and few dashes of sea salt. Mix everything together with hands until evenly coated. Bake them in the oven for 25 minutes. For the last 3 - 4 minutes I put them in the broiler to make them a little crispy. DELISH! Enjoy!
